Reserve Airport Parking This Holiday and Help Give a Kid a Toy

A report Tuesday from Gallup states that consumer spending was down 21% from 2008. With unemployment remaining high, more families will be struggling to give gifts this year.

In its 62 year history, the U. S. Marine Corps Reserve Toys for Tots Program has distributed more than 400 million toys to over 188 million needy children. “Finding a parking lot sold out at Christmas is a hassle, but not having any Christmas presents is hard on both parents and children. If we can help even a small number of families, it will be worthwhile,” said Budde.

Grilled Salmon Sandwich

If you’re looking for a budget recipe for kids which can serve up to four people and yet not sacrifice sumptuousness and nutrition. then the Grilled Salmon Sandwich specialty should be the first among your consideration. We all know how nutritious fish is for our children. Here goes the recipe:

Ingredients:
1 medium cucumber, sliced
½ cup red pepper, sliced
1 small onion, chopped
2/3 cup plain yogurt
1/3 cup mayonnaise
2 fresh and deboned fillets of salmon
1 tbsp fresh lemon juice
1 tsp dill weed
1 tsp parsley
1 tsp ground coriander
1 tsp rosemary
1 tsp oregano
2 tbsp olive oil

Instructions:
Heat olive oil in a large skillet and add rosemary and oregano. Fry the salmon fillets until nice and golden. In separate pan, heat 1 tbsp olive oil, then sauté red pepper, cucumber slices and onion.

Mix yogurt, mayonnaise, lemon juice, dill weed, parsley and coriander in a bowl.

Serve the cooked salmon on your choice of bread or bread roll, top with the dressing and sautéed vegetables. Top with another piece of bread or the top of the bread roll and enjoy this delicious salmon sandwich.
