Finding recipes for kids lunch boxes can be tricky. Most parents just reheat last night’s dinner left overs and send their kids on their way.

Lunch is a pretty important meal during a child’s day, though, so if you have more time to think about and make what your kids will be taking to lunch at school, put in the extra effort. · Tortilla Wrap

This is easy to do, and you can still use the leftovers! Wrap some meat and vegetables in a tortilla. You can add salsa, cheese, and/or sour cream if you like. · Chicken Salad Sandwich

Put some chopped chicken, lettuce, tomatoes, and cucumber between slices of whole wheat bread. You can add cheese or salad dressing to this sandwich to make it yummier and more appealing. Remember that you don’t have to use chicken. You can substitute chicken for tuna, sliced beef, or sliced turkey. Almost any member of the protein group will go well with this sandwich, and so you can actually mix it up and have a different one everyday!

· Meatball Sub

Grab a mini baguette and line it with mustard (if your kid likes mustard), mayonnaise, cheese, tomatoes, and pickles. Put in some meatballs cooked in tomato sauce (you can use the leftovers from the spaghetti and meatballs you served the other night), and top it off with some sour cream. Wrap this well in a sandwich wrapper or foil, and your kid is ready to go!

· Croquettes

This recipe takes a bit more time to prepare. You can do the prep for it the night before, and just do the frying on the morning you’re going to pack it. While frying isn’t the healthiest form of cooking because of the excessive oil, croquettes are easy finger foods for kids. You can shape them into ping pong balls to make them easier to eat. Stuff them with mashed potatoes, tuna, turkey, or other healthy proteins. You can also just stuff them with bechamel and cheese, and your kids are in for a tasty treat!

Always try to put in a juice box and fruit cup into the lunch box apart from the above suggestions. Yogurt and granola bars can also work as a sweet snack. Ask your children what “extras” they’d like in their lunch boxes and keep them healthy!

Someone can cut up vegetables, someone else be in charge of cooking the dessert, and another person in charge of the main meal. Have everyone pitch in and the work will be completed quicker. You can also use the time to reconnect and talk about what’s happened in each person’s life since your last family fun night.

Once the meal is complete, take time to set a nice table and eat there rather than in front of the television. You can make clean-up a breeze by using disposable plates and napkins if you like, but you can also make the dinner seem more special by using nice place settings which are normally reserved for holidays.

Three Super-Easy Slow Cooking Recipes

Slow cookers, or crock pots, are wonderful tools in any home kitchen. Not only do they allow you to make a wonderful meal, you don’t even have to be present the entire time it’s cooking! You may want to try one of these three super-easy slow cooking recipes for kids if you’ve never used a slow cooker before.

One meal commonly prepared in a slow cooker is pot roast. While this meal is often traditionally prepared in a cast iron Dutch oven or in the stove, there’s nothing quite like how moist and tender a slow cooker makes the meat.

Slow Cooker Pot Roast

1 rump roast or shoulder roast
2 cans cream of mushroom soup
1 can water
2 cloves minced garlic
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon basil
1 teaspoon oregano
6 small potatoes cut into quarters (red or golden)
1/2 onion, diced (or 1 teaspoon onion powder)
3 cups chopped carrots
3 cups mushrooms, whole or chopped

Begin by removing any large pieces of fat from the roast and put it into a slow cooker set on low. Chop the vegetables so they’re ready when needed. Add the soup, water, herbs, spices, and onions with the roast and let this simmer. When the roast has cooked 3-5 hours, add the rest of the vegetables and allow this to simmer for another 1-2 hours.

Perhaps your family is vegetarian. You can still use the slow cooker for making Vegetarian Chili.

1 - 16 ounce tomato sauce
1 - 32 ounce kidney beans, drained
1 - 16 ounce canned corn
1 onion, chopped
1 crushed clove of garlic
1 sliced green pepper
1 chopped tomato
2 teaspoons of chili powder
1 teaspoon of cumin
1 bay leaf
1 teaspoon of salt

Add all ingredients into the slow cooker and stir them. Put the cover on the slow cooker and cook on high for 3 to 4 hours. This will make 6 to 8 servings and is great for leftovers, if you have any.

For those who like dessert with their meals, you can use your slow cooker for that, too. Here’s a recipe for Blueberry Cobbler:

1/2 cup all-purpose flour
3/4 cup sugar – divided
1/2 teaspoon of baking powder
1 pinch each salt, cinnamon, and nutmeg
1 beaten egg
1 tablespoon of milk
1 tablespoon of vegetable oil
2 cups of blueberries
1/4 cup of water

In a small bowl, combine flour, half of the sugar, baking powder, and spices. Combine eggs, milk, and oil in another small bowl then pour this mixture into the dry ingredients until it’s moistened. Grease the slow cooker on the bottom and sides and then spread the batter on the bottom of the cooker.

On the stove, over medium heat, combine the blueberries, water and the other half of the sugar. Bring this mixture to a boil and then remove it from the heat. Pour the berries into the slow cooker and cook on high for two hours. Turn off the cooker after the two hours, uncover it, and then allow it to set for at least 30 minutes before serving. You may want to serve with vanilla ice cream, home-made or store-bought.

Slow cookers are great for those days you want to have dinner waiting for you due to time constraints, but they’re also good for making dessert. If you try one of these three super-easy slow cooking recipes, you may find the slow cooker is one tool you’ll want to have in your kitchen.

Ingredients:
2 tbsp butter, unsalted
4 cloves garlic, minced or mashed
2 eggs, beaten
2 cups cauliflower, chopped
1/2 yellow onion
1 cup parmesan cheese
5 slices bacon, crisp and crumbled

Method:
Preheat oven to 350F. Grease oven baking dish

In a skillet, heat butter and sauté onions and garlic until onions are tender and slightly golden. Add cauliflower and cook for another minute. Transfer to grease baking dish.

Combine eggs, parmesan cheese and crumbled bacon in separate bowl. Spoon into the greased baking dish, then bake for 1 hour.

Spinach Rice Salad

This is one of the best recipes for kids because it is inspired by the favorite food of Popeye The Sailorman. Very nutritious for the kids to eat!

Ingredients:
6 cups fresh spinach, torn
1/4 cup sunflower seeds
1/4 cup white balsamic vinegar
1/4 cup olive oil (preferably extra virgin)
1 tbsp honey
1 cup green grapes, cut in half
1 cup raspberries
2 oranges, peeled and cut into sections
2 tsp fresh basil
2 cups of brown rice, cooked and chilled
Salt and pepper to taste

Method:
Add spinach, rice, grapes and sunflower seeds to a large salad bowl and combine.

Blend vinegar, oil, honey, basil, salt and pepper thoroughly and pour over rice mixture. Toss until well coated then gently add oranges and raspberries.

This would make an ideal accompaniment to any BBQ meat.

Salmon Pasta Salad

Another salad recipe for kids. It is a combination of salmon fish taste and pasta with cheese and tomatoes. Your kids will surely say, “This is so yummy!” Learn how to prepare it. Here are the ingredients.

Ingredients:
15-1/2 oz canned salmon
8 oz macaroni
2 cups cucumber, sliced
1 cup mozzarella cheese cut into this strips
1/2 cup parsley, chopped
1/4 cup parmesan cheese, grated
2 cups cherry tomatoes, cut in half

Lemon Dressing
3/4 cup olive oil
1/4 cup lemon juice
2 cloves of garlic, minced
1/2 tsp dill weed
1/2 tsp lemon peel, grated
Pepper to taste

Method:

Cook macaroni according to packet instructions. Drain, rinse and cool.

4. Latch! Use your one hand to cup the breast and offer it to baby. Baby should open his or her mouth wide enough to take a good portion of the areola tissue (darker portion of the breast) into the mouth. As baby does this pull them closer to the breast and watch them nurse.

5. Baby needs a break, it’s time to change sides or is finished, simple slip a finger in the corner of their mouth to gently break the suction. If you don’t do this you will cause yourself a lot of pain. You can then offer the other side following the same steps.

* Make sure that the air in your refrigerator is circulating effectively. If you put too much in your fridge, it may not keep all the items at an adequately low temperature.

* Before you prepare baby food, wash your hands thoroughly with hot soapy water. You should also do this when you switch from handling raw foods to cooked ones.

* Make sure that your surfaces are scrupulously clean. You can achieve this by washing them thoroughly with hot, soapy water. Despite what the advertisers will have you believe, you do not need special anti-bacterial cleaners or wipes!

* Make sure that you change your dish-washing sponge on a regular basis and that it is always kept clean (soaking it overnight in bleach is a good idea). Be sure to wash your tea towels regularly, too!

* Before you cook frozen foods for your baby, thaw them completely in the refrigerator overnight.

* Always cook food to a minimum internal temperature of 160 deg F (70 deg C), which will kill virtually all bacteria, viruses and parasites. (Some meats may require a slightly higher temperature - see this table from the USDA for more specific temperatures for different foods).

* When you prepare baby food - particularly poultry, meat and eggs - make absolutely sure that it is cooked through. It is also important to thoroughly reheat any foods that you have previously prepared.

* Use two cutting boards in your kitchen - one for raw meat/fish and another for vegetables and fruits. To prevent cross-contamination, you need to make sure that raw foods never come into contact with cooked ones.

* Always wash vegetables or fruits that you are planning to prepare for your baby under running water.

* Once you have cooked your baby’s food, you should serve it to him as soon as it has cooled enough for him to eat. Take out as much as he needs for his meal and refrigerate or freeze the leftovers as soon as possible - don’t leave them sitting at room temperature.

* You can limit the growth of bacteria by cooling foods very rapidly - to do this, store food that you have prepared for your baby in shallow containers.

* It is not recommended that you give your baby unpasteurized milk or fruit juice. This is because it will not have been processed to remove potentially harmful bacteria. If you are in any doubt, check the label or contact the manufacturer.

* Always keep pets away from your baby’s food and make sure that it is adequately protected from insects.
